Super Sunday Fondue



After a big day of building snow forts and snow men in our tundra, we settled in to watch the Super Bowl.  It's always a treat to have a "snacky dinner" and watch our favorite sport.  To satisfy a recent craving, the chef in the house decided that fondue just had to be on the menu.

So easy.  So good.

3 Cheese Fondue

1 cup light beer (it was for a football game after all)
1 tablespoon butter
1 tablespoon all-purpose flour
1 c. Gruyere cheese, shredded
1 c. sharp Cheddar cheese, shredded
1 c. Emmentaler cheese, shredded
Directions

1.Bring the beer to a boil in a small saucepan.  After measuring the beer, sip the rest while cooking.

2.Meanwhile, melt the butter in a medium saucepan over medium low heat. Whisk in the flour, and cook for about 5 minutes, stirring constantly to avoid sticking and burning.

3.Once the flour is cooked, stir the beer into the flour mixture slowly. Use a whisk to smooth the mixture. Slowly add the shredded Gruyere, Cheddar, and Emmentaler cheese; stir until cheese is melted. Transfer cheese mixture to fondue pot. Keep warm over low flame.



We choose carrots, celery, broccoli, and some crunchy italian snacks sticks as our dippers.  The veggies make it healthy....right?
