It's a snow day here. Actually ice day would be a more appropriate term. I'm taking advantage of the fact that we still have power, and putting the oven to use all day!
Hillbilly grew up on these Oatmeal Peanut Butter Chocolate Chip cookies. Could there be a more perfect combination? My MIL was kind enough to pass on the recipe, and at Nate's request, there were first on our baking list for today.
Oatmeal Peanut Butter Chocolate Chip Cookies
1/2 c. Peanut Butter
1/2 c. Packed Brown Sugar
1/2 c. Granulated Sugar
1/2 c. Butter, softened
1 Egg
1 t. Vanilla Extract
2 T. Milk
1 c. Flour
1 t. Baking Soda
1/2 t. Baking Powder
1/2 t. Salt
1 & 1/2 c. Oats
1 c. Chocolate Chips
Beat together butter and both sugars until creamy. Beat in peanut butter, mixing well. Add egg, vanilla, and milk until smooth. Sift together dry ingredients and add. Stir in oatmeal and chocolate chips. Drop by the spoonful onto greased cookie sheet. Bake at 350 for 10-12 minutes until lightly golden on top. Enjoy on a cold day with a warm cup of coffee!

When I read today's post, my mouth started drooling! Those cookies look SO GOOD!!! As a matter of fact, I just whipped some up and have them in the oven now! (Well....about 1/2 the dough is in the oven because I couldn't help myself from eating the cookie dough!!!!) So yummy! Thanks for sharing the recipe. These sound amazing! Only thing that would make them better is if I was eating them with you and drinking our coffee :-). I'm hoping I have all of these ingredients in my pantry right now as I am snowed in!!!
